Product description

Physical and chemical properties:

Sodium acid pyrophosphate is a white solid powder with a relative density of 1.862. It is soluble in water but insoluble in ethanol. Its solubility at 100 °C is 32.5%, and its aqueous solution is acidic, with the pH of a 1% aqueous solution being approximately 4-4.5. Sodium acid pyrophosphate can form chelates with Mg²⁺ and Fe²⁺. When its aqueous solution is heated with dilute inorganic acids, it can be hydrolyzed into phosphoric acid. Sodium acid pyrophosphate has slight hygroscopicity; after absorbing water, it forms a hexahydrate. When heated above 220°C, it turns into sodium metaphosphate.

Applications:

In the food industry, sodium acid pyrophosphate is used as a rapid leavening agent, quality improver, etc. For example, adding it to barbecued food can control the fermentation speed and improve production efficiency; it is used as the acidic component in composite leavening agents for bread, pastries, etc., which can extend the storage time, make the porous structure neat, and reduce the breakage rate of biscuits and pastries; when used in sausage processing, it can improve the taste, enhance the color, and speed up the processing; when applied in aquatic product processing, fish balls, fish sausages, and frozen foods, it can prevent the formation of crystal flowers and control moisture. Sodium acid pyrophosphate, when compounded with other phosphates, can be used as a water-retaining agent in meat products such as luncheon meat, cooked ham, and canned meat, and as a rehydrating agent in instant noodles, etc.

Transportation conditions: It is strictly prohibited to mix and transport with oxidants, acids, edible chemicals, etc. During transportation, exposure to sunlight, rain, and high temperatures should be prevented. The vehicle should be cleaned after transportation. For road transportation, it shall follow the specified route. Air transportation: Sodium acid pyrophosphate can be handled under ordinary cargo conditions.

Storage conditions: It should be stored in a cool and dry place. Attention should be paid to protecting it from sunlight, moisture and package damage. It is recommended to stack it on shelves or single-layer pallets.

Shelf life: Under the above storage and transportation conditions, the shelf life is 12 months.
